Reuse an acetate cake collar only when the manufacturer allows reuse for that specific product, it can be cleaned as directed, and it remains undamaged.
The same batter spreads over more area in a larger pan, so the layer starts and finishes shorter.
For the same layer depth in two round pans, multiply the entire recipe by new diameter² ÷ old diameter². If the target layer is also deeper or shallower, include the depth ratio.
Pan diameter alone does not determine the correct cake height. If you keep the same height, required cake volume rises with the square of the diameter.
For an 18 → 24 cm round pan, use (24/18)² = 1.78. Scale the formula to keep batter depth similar, weigh eggs without shells, and do not automatically change temperature or multiply bake time just because the…
For a frozen entremet, remove the collar while the dessert is still fully frozen. For a chilled, unfrozen mousse cake, wait until the filling can support its own edge without the ring.
