For instant yeast, a useful general starting point is fresh yeast × 0.33. For active dry yeast, a professional guideline is about fresh yeast × 0.40.

Tapioca is the name for starch and processed products made from cassava root. In baking, the usual ingredient is refined tapioca starch, which many brands also call tapioca flour.
Texture depends not only on how much fat a dessert contains, but on how much of that fat is solid at working and serving temperature, how it crystallises and how it is organised in the system.
When a cream separates, first identify whether you are dealing with ganache/emulsion, buttercream, whipped cream, or a starch- or gel-set cream.
